TIPS
Cook fatty meats such as ribs over moderate heat, which takes time to cook inside and remove excess fat. Meat for slaughter (cattle and pigs) needs high temperatures, while white meat (chicken, turkey, rabbit) needs moderate heat. Fish takes less time than meat and should be cooked over low heat, as well as vegetables.
With the grill it is possible to cook food with two different techniques: with traditional direct cooking, suitable for thin cuts of meat, for fish and for vegetables (in general for all foods that do not require more than 20 minutes of cooking), or through indirect cooking, in which the barbecue is used as if it were an oven.
Preheat the barbecue to 200° by turning on all the burners. Once the temperature is reached, turn off/keep the central burners on very low heat, place the food in them and close the lid: in this way, currents of hot air will be obtained with an oven effect. Indirect cooking is ideal for cooking very fatty (ribs) or large foods that require cooking times longer than 20/25 minutes (whole chickens or turkeys, roasts, whole fish
