When first using the soapstone, it is necessary to wash both sides with warm water and baking soda, then grease it with olive oil and let it rest for at least 24 hours. Remove excess fat and heat it with moderate heat for 30 minutes, then let it cool down. Now the stone is ready for use.
After each use, the stone should be washed with warm water only when it has cooled down. Do not pour cold water on the hot plate. Never use detergents, as the stone would absorb chemicals and release them during cooking. Do not use steel scouring pads that could damage the stone. To clean it, use a cloth soaked in water and vinegar
