With the grill it is possible to cook food using two different techniques: with traditional direct grilling, suitable for thin cuts of meat, fish and vegetables (generally for all foods that don't require more than 20 minutes of cooking), or by indirect cooking, where the barbecue is used like an oven.
Preheat the barbecue to 200°C by turning on all the burners. Once the temperature is reached, turn off/set the central burners to very low, place the food over them and close the lid: this will create hot air currents with an oven effect. Indirect cooking is ideal for very fatty foods (ribs) or large items that require cooking times over 20—25 minutes (whole chickens or turkeys, roasts,
whole fish).
