With the grill it is possible to cook food using two different techniques: with traditional direct cooking, suitable for thin cuts of meat, for fish and for vegetables (in general for all foods that don't require more than 20 minutes of cooking), or with indirect cooking, where the barbecue is used like an oven.

Preheat the barbecue to 200° by turning all burners on. Once the temperature is reached, turn off/set the central burners to a very low flame, place the food over them and close the lid: this will create hot air currents with an oven effect.
