  • Cleaning: The golden rule is: do not wash the mushrooms with water! Being spongy, they would absorb it, greatly lengthening drying times. Use a soft bristle brush, a damp cloth, or the tip of a small knife to remove soil, pine needles, and leaves. Be meticulous.
  • Quality Control: Carelessly discard any fungus that has blackened, soft parts, or larval holes. When drying, defects are accentuated. Start only from impeccable raw material.
  • The Cut: Consistency is the key. Cut the mushrooms into slices of constant thickness, ideally between 4 and 7 millimeters.
