TIPS
Cook fatty meats such as ribs over moderate heat, which takes time to cook inside and remove excess fat. Once the temperature is reached, turn off/keep the central burners on very low heat, place the food in them and close the lid: in this way, currents of hot air will be obtained with an oven effect.
