With the grate it is possible to cook food using two different techniques: with the traditional direct grilling, suitable for thin cuts of meat, for fish and for vegetables (in general for all foods that do not require more than 20 minutes of cooking), or by indirect cooking, where the barbecue is used like an oven.
Preheat the barbecue to 200° by turning on all burners. Once the temperature is reached, turn off/set the central burners to very low, place the food on the grate and close the lid: this creates hot air currents with an oven effect. Indirect cooking is ideal for very fatty foods (ribs) or for large items that require more than 20—25 minutes of cooking (whole chickens or turkeys, roasts,
whole fish).
