Practical Tips for Becoming an Instant Pot Master

To make the most of your new ally, here are some tricks of the trade and the most common mistakes to avoid.

TO DO: Use the Sauté function before starting pressure cooking. Sautéing onions, garlic, vegetables and meat directly in the pot creates an incredible flavor base (Maillard's famous reaction) that will enrich your final dish. Wait for the display to show 'Hot' before adding the ingredients. WHAT NOT TO DO: Don't be in a hurry. Let the ingredients brown nicely. After browning, 'degass' the bottom of the pot with some liquid (broth, wine, water) and scrape with a wooden spoon to remove all the caramelized particles. Not only does this add flavor, but it also prevents the dreaded 'Burn' error message.
There are two ways to let out the steam at the end of cooking. The choice depends on what you are cooking.
Natural Pressure Release (NPR): Simply leave the pot in “Keep Warm” mode at the end of cooking. The pressure will drop slowly on its own (it takes 10-30 minutes). It is ideal for meats (such as roasts and stews), legumes, soups and broths, because it keeps the meat tender and prevents the legumes from breaking.
Quick Pressure Release (QPR): Manually move the steam valve to “Venting” to let the steam out quickly. Watch out for the hot steam jet. It's perfect for foods that cook quickly and that you don't want to overcook, such as steamed vegetables, fish, and pasta.
Pressure cooking works thanks to steam, and liquid is needed to create steam.
TO DO: Make sure to always add the minimum amount of liquid required by your recipe (usually around 250-350 ml). This liquid can be water, broth, wine, juice.
WHAT NOT TO DO: Do not use thickening agents (such as flour, cornstarch, or cream) before pressure cooking. These can burn on the bottom and prevent the pot from reaching the correct pressure. Always add them at the end, using the Sauté function to thicken the sauce.
It's tempting to fill the pot to the brim, but it's a mistake. There is a maximum filling line ('PC MAX') that should never be exceeded. For foods that expand in cooking (such as legumes, rice, or oats), don't exceed the half-pot line. Leaving adequate space is essential for safety and for allowing steam to circulate properly, ensuring uniform cooking.
