Pro Tips: The 5 Mistakes Not to Make with Your New Ooni Oven

To get pizzeria-style results right away, avoid these common traps.

The Problem: If the baking stone is not hot (at least 400°C in the center), the base of the pizza will not cook quickly. The result will be a pale, soft bottom, while the seasoning on the surface will burn due to the flame.
The Solution: Be patient! Preheat your Ooni for at least 15-20 minutes at full power. Invest in an infrared thermometer to measure the exact temperature of the stone before baking. It's a small accessory that makes a huge difference.

The Problem: For fear that the pizza will stick, we tend to use too much flour or semolina on the shovel. This excess flour will end up on the stone, it will burn instantly producing smoke and an unpleasant bitter taste that will stick to the base of the pizza.
The Solution: Use a very light veil of re-milled semolina or flour on the shovel. Make sure the dough is well hydrated but not sticky. Before topping, move the pizza on the shovel to ensure that it 'slides' freely.

The Problem: A mountain of condiments, especially if moist (such as mozzarella not well drained or raw vegetables), will release water during cooking very quickly. This will prevent the base from cooking properly, resulting in a 'wet' pizza in the center. In addition, it weighs down the dough making it difficult to bake it.
